Ingredients (9)

3.00 fresh chives — finely chopped
125.00 g button mushrooms — sliced
oil
3.00 eggs — beaten
50.00 g prawns — frozen or cooked chicken strips
500.00 ml rice — white, cooked
30.00 ml soy sauce
50.00 ml peas — frozen
salt and freshly ground black pepper — to taste

Method:

Sauté the chives and mushrooms in a little oil until brown. Add the beaten eggs and stir-fry until the egg is cooked but still creamy. Remove to a hot plate and keep warm.
Stir-fry the remaining ingredients for about 2 minutes until hot. Add the scrambled egg and mix lightly. Season to taste with salt and black pepper.
Serve immediately.
