Fried rice

    chives, finely chopped
  • 125

    button mushrooms, sliced
  • oil
  • 3
    eggs, beaten
  • 50

    frozen prawns OR cooked chicken, cut into strips
  • 500
    ml
    cooked white rice (plain or jasmine flavour)
  • 30
    ml
    soy sauce
  • 50
    ml
    frozen peas
  • salt and black pepper to taste
 

Method

 
Sauté the chives and mushrooms in a little oil until brown. Add the beaten eggs and stir-fry until the egg is cooked but still creamy. Remove to a hot plate and keep warm. Stir-fry the remaining ingredients for about 2 minutes until hot. Add the scrambled egg and mix lightly. Season to taste with salt and black pepper. Serve immediately.
