Fried lamb cubes

    g
    deboned shoulder of lamb, cut into 15 g uniform cubes
  • 150
    ml
    oil
  • 5
    ml
    coriander
  • 5
    ml
    fennel seed
  • 2
    cardamom seeds
  • 2
    pimento seeds
  • 5
    ml
    garam masala or curry powder
  • 1
    grated rind and juice of a lemon
  • 25
    ml
    fresh (or 5 ml dried rosemary)
 

Method

 
Place the meat in a glass mixing bowl. Blend the remaining ingredients, spoon over the meat, mix well and marinate overnight in the fridge. Drain the meat, thread two cubes onto a toothpick, place on the rack of an oven-roasting pan and grill for five minutes under the oven grill. Turn, baste with the marinade and grill for another five minutes. Serve hot with mustard sauce.
