Ingredients (9)

500.00 g lamb — deboned shoulder, cubed
150.00 ml oil
5.00 ml coriander
5.00 ml fennel — seed
2.00 cardamom — seeds
2.00 pimento seeds
5.00 ml garam masala — or curry powder
1.00 lemon — zest and juice
25.00 ml fresh rosemary — chopped or dried

Method:

Place the meat in a glass mixing bowl. Blend the remaining ingredients, spoon over the meat, mix well and marinate overnight in the fridge. Drain the meat, thread two cubes onto a toothpick, place on the rack of an oven-roasting pan and grill for five minutes under the oven grill. Turn, baste with the marinade and grill for another five minutes. Serve hot with mustard sauce.
