Fried crispy chicken

Time 15 minutes plus cooling time

Ingredients

  • 4
    Chicken Maryland portions OR
  • 8
    chicken legs
  • 4
    cloves garlic, chopped
  • 3
    sprigs fresh coriander, chopped
  • 15
    ml
    turmeric
  • 2
    ml
    freshly ground black pepper
  • 5
    ml
    each salt and castor sugar
  • 40
    ml
    sweet chilli sauce
  • oil for shallow-frying
 

Method

about 50 minutes
 
Boil the chicken portions in a little water until done.
Allow to cool completely.
Process the rest of the ingredients except the oil, in a food processor until smooth.
Alternatively, pound to a paste in a mortar and pestle.
Spread the mixture on the chicken portions and place the chicken in a bowl.
Cover the bowl and refrigerate for 30 minutes.
Hea the oil in a heavy-based pan and fry the chicken until browned, turning regularly.
Drain on paper towels and serve with potato wedges.
NOTE: A Maryland is a leg and thigh together.
