Fried courgettes

    ml
    olive oil
  • 5
    ml
    butter
  • 8
    courgettes, sliced into rings
  • 5
    ml
    lemon juice
  • 30
    ml
    freshly chopped parsley
  • 5
    ml
    fresh basil, finely chopped
  • 50
    ml
    finely grated Parmesan cheese
  • 1
    grated rind of a lemon
  • salt and freshly ground black pepper to taste
 

Method

 
Heat the olive oil and butter in a pan and stir-fry the courgettes until just done, but still slightly crisp. Add the lemon juice and mix well. Add the remaining ingredients just before serving, mix and season with salt and black pepper. Serves 4-5.
