Fried chicken portions with almonds

    cornflour
  • 15
    ml
    soy sauce
  • 5
    ml
    castor sugar
  • 6
    chicken portions (thighs or legs)
  • 30
    ml
    oil
  • 50
    g
    almond flakes
  • 250
    ml
    chicken stock
  • pepper
  • salt
 

Method

 
Mix the cornflour, soy sauce and castor sugar together. Sprinkle over each chicken portion. Heat the oil in a large saucepan and brown the chicken portions. Add the almond flakes and fry for another minute. Pour 125-250 ml chicken stock over, lower the heat and simmer until the chicken is tender and cooked. Season with pepper and salt and, if necessary, add more stock. Serve with spicy rice. Serves 6.
