Ingredients (13)

100.00 g walnuts — chopped
120.00 ml walnut oil — or extra virgin olive oil
60.00 ml lemon juice — fresh
1.00 onion — peeled and chopped
2.00 garlic — cloves, crushed
60.00 ml fresh oregano — chopped
sea salt and freshly ground black pepper
200.00 g goat's milk cheese — or brie, wedges
1.00 eggs — lightly beaten
125.00 ml breadcrumbs — dried
oil — for frying
lettuce — assorted leaves
edible flowers

Method:

Blend 50 g of the walnuts, the oil, lemon juice, onion, garlic and origanum in a food processor until smooth, thick and creamy. Season with salt and pepper to taste. Dip the cheese into the egg and then into the breadcrumbs and fry until golden brown. Arrange lettuce leaves in a salad bowl, drizzle on the dressing and add cheese and toss. Sprinkle on the remaining walnuts. Garnish with edible flowers.
