Fried brinjal with halloumi cheese

Ingredients

  • 75
    ml
    cake flour
  • 2
    ml
    oregano, finely chopped
  • 1
    ml
    lemon pepper
  • 1
    ml
    salt
  • 2
    small brinjals
  • 150
    g
    halloumi cheese
  • oil for shallow-frying
 

Method

5 to 10 minutes
 
Mix the flour, oregano, lemon pepper and salt in a plastic bag.
Slice the brinjals and cheese and place in the plastic bag.
Shake gently to coat the brinjal and cheese slices with the flour mixture.
Fry the slices in shallow oil until golden brown, remove with a slotted spoon and drain on paper towels.
Serve as part of a Meze platter.
