360.00 ml flour — cake
5.00 ml Baking powder
100.00 g butter
125.00 ml castor sugar
5.00 ml vanilla — essence
1.00 eggs — extra-large, whisked
milk

Method:

Sift the dry ingredients together. Cream the butter, castor sugar and vanilla essence together until light and fluffy. Beat in the egg. Add the dry ingredients and mix well. (Add a little milk if the dough is too dry.) Shape the dough into a long roll and wrap in wax paper. Chill overnight. Slice into thin rounds and arrange on greased baking sheets. Preheat the oven to 190 ºC and bake the cookies for about 10 minutes until golden brown and done. Cool slightly before transferring to a wire rack to cool completely. Store in airtight containers.
Makes 27 cookies.
