500.00 ml tuna — finely diced
1.00 spring onions — a bunch
45.00 ml daikon — grated
5.00 ml fresh ginger — minced
30.00 ml soy sauce — light
15.00 ml mirin
3.00 ml wasabi — paste
0.00 fresh chives — with flowers
0.00 green beans — fine
0.00 fresh Italian parsley
0.00 rice paper wrappers

Method:

Gently mix tuna, spring onion and daikon together and set aside.
In a separate bowl, mix ginger, soy, mirin and wasabi together.
Stir mixture into tuna and mix well.
Adjust flavour according to taste.
Place rice paper in a bowl of water.
Allow to stand for a few minutes to soften.
Place a tablespoon or so of the mixture along the side of the rice paper nearest you.
Top with a chive, so that the chive is poking out of the top of the paper.
Begin to roll from this end, folding in the side edges after the first roll.
Place a bean and a sprig of parsley onto the rolled paper and continue to roll until you have a package.
Place the roll, seam-side-down and continue until the mixture is finished.
Serve as a starter with extra soy sauce for dipping.
