Fresh tuna with garlic oil

    cloves garlic, crushed
  • 5
    red chillies, seeded and diced
  • 5
    tomato purée
  • 150
    olive oil
  • 2
    tuna fillets


Heat a ribbed cast-iron pan until very hot. Blend the garlic, chillies, tomato purée and olive oil. Brush the fish with the mixture and grill in the pan until brown on both sides and until the fish flakes easily with a fork. Brush the fish frequently with the oil mixture. Serve immediately with a little of the remaining oil mixture drizzled on top and with slices of lemon or lime on the side, if desired. Serves 2.
