Fresh tuna nicoise

    fresh tuna
  • lemon juice and olive oil
  • 150
    fresh green beans
  • 20
    baby potatoes
  • 410
    butter or cannellini beans
  • 4
    medium Roma tomatoes
  • 1
    large red onion
  • 4
    baby cucumbers
  • 8
  • 16
    black olives
  • 4
    boiled eggs
  • watercress (optional)


Wipe tuna with a damp cloth. Drizzle with lemon juice and olive oil and grill or pan-fry until just cooked. Set tuna aside.
Remove tops from green beans and plunge into boiling water.
Cook for 6-8 minutes and place in a bowl of cold water to cool.
Combine all vegetables, anchovies and olives together on a large platter and toss to mix well.
Top with egg quarters, chunks of tuna and watercress.
Drizzle with lots of garlicky vinaigrette.
