Ingredients (7)

50.00 g butter
1.00 onion — sliced
900.00 g tomatoes — ripe
10.00 ml sugar
5.00 ml salt
15.00 ml fresh basil — chopped
black pepper — freshly ground

Method:

1. Melt the butter in a pan, add the onion and gook gently until soft. Pour boiling water over the tomatoes, leave them to soak for no longer than 1 minute, then drain them and peel off the skins.
2. Cut each tomato in half, scoop out the seeds using your fingers and discard the seeds. Chop each tomato roughly and toss it into the pan with the softened onions.
3. Add the sugar, salt and chopped basil, then simmer for 10 minutes. Season with black pepper. Serve with pasta.
