Fresh orange and vanilla waffles

  • 350
    ml
    orange juice
  • 60
    ml
    sweet wine or orange liqueur
  • 30
    ml
    icing sugar plus extra for dusting
  • 2
    oranges
  • 250
    ml
    cream
  • 5
    ml
    vanilla essence
 

Method

 
1. Preheat oven to 200 ºC. Place waffles on a baking sheet and then in oven for 5 minutes or until warm. 2. Meanwhile, heat orange juice with wine or liqueur, add icing sugar, stirring continuously until boiled and thickened. 3. Remove waffles from oven. Peel and segment oranges. 4. Whip cream together with vanilla essence until thick. 5. Divide between warm waffles. Top each with some orange segments and spoon over a little of the warm orange sauce. 6. Dust tops lightly with icing sugar before serving.
