Ingredients (5)

150.00 ml white wine
25.00 ml lemon juice
200.00 g butter — diced
30.00 ml mixed herbs — thyme and dill and parsley and sage and basil and tarragon, chopped
1.00 tomatoes — quartered, deseeded and thinly sliced

Method:

Bring wine and lemon juice to boil in a stainless-steel saucepan. Whisk in butter, one piece at a time.
Remove saucepan from heat as soon as it threatens to boil.
Add herbs and tomato, stir and pour over fish.
