Fresh fruit with lime, tequila and vanilla syrup

    vanilla extract or essence
  • 2
    limes, the juice
  • 50
    tequila (optional)
  • 1
    fresh pineapple, peeled and cubed
  • 2
    fresh guavas, peeled and cubed OR
  • 0.50
    can, drained
  • 1
    fresh mango, peeled and sliced OR
  • 1
    can mangoes, drained
  • 1
    small pawpaw, peeled and cubed
  • fresh mint, to serve


15 minutes, plus cooling time
Place sugar in a saucepan and add 125 ml water.
Bring to the boil, then add the cinnamon stick and vanilla and reduce the heat.
Simmer for 10 minutes, remove from the heat and stir in the lime juice and tequila.
Add the pineapple and guava, and set aside until cool.
Add the mango and pawpaw, and chill until ready to serve.
Remove cinnamon before serving.
Garnish with sprigs of fresh mint.
