Fresh fruit curry

  • 6
    pieces preserved ginger
  • 2
    onions, finely chopped
  • 65
    ml
    butter
  • 15
    ml
    curry powder
  • 15
    ml
    cake flour
  • 5
    ml
    coriander seeds
  • 500
    ml
    chicken stock
  • 10
    ml
    lemon juice
  • salt and freshly ground black pepper to taste
  • 750
    ml
    coconut
  • 1
    Litres
    fresh fruit, unpeeled, roughly chopped
 

Method

 
Plunge the ginger into boiling water to remove most of the syrup, drain and chop finely. Sauté; the onion in butter until tender, add the curry powder, cake flour, coriander seeds and chopped ginger and heat slowly for about five minutes while stirring continuously. Remove from the heat, slowly stir in the chicken stock, return the saucepan to the stove and bring to the boil. Add the lemon juice and salt and pepper to taste. Simmer for about 30 minutes. Remove from the heat and stir in the coconut. Add the fruit and mix. Chill until needed.
