Grease the base of a saucepan with butter and add the apricots and sugar. Heat slowly, stirring constantly, until sugar is dissolved. Boil rapidly until the jam is the right consistency – about 20 minutes. Stir occasionally to prevent mixture sticking. Pour hot jam into clean sterilised jars and seal with sterilised lids.
