Fresh watercress pasta

    short pasta
  • handful
    watercress
  • handful
    fresh basil
  • 2
    cloves
    garlic
  • 60
    ml
    roasted almonds
  • 100
    ml
    parmesan cheese, grated
  • 150
    ml
    olive oil
  • juice of 1 lemon
  • 3
    celery sticks, finely chopped
  • 200
    g
    cherry tomatoes, halved
  • 2
    smoked chicken breasts thinly sliced

Cook the pasta as per instructions on the packet. Meanwhile, purée the watercress, basil, garlic, almonds, parmesan and oil in a blender, to make a thick sauce. Season well with salt and pepper and mix it through the cooked pasta.

Mix the celery, cherry tomatoes and smoked chicken slices and add to the mixture; serve warm.
