French toast with cinnamon

Ingredients

  • 4
    large eggs
  • 250
    ml
    milk
  • 10
    ml
    cinnamon
  • 5
    ml
    vanilla essence
  • 30
    ml
    sugar
  • 45
    g
    butter
  • 12
    slices day-old crusty or French bread
  • fresh fruit in season, sliced or cubed
  • thick yoghurt, to serve
 

Method

Beat together the eggs and milk, 5 ml cinnamon and vanilla essence.
Mix the remaining cinnamon with the sugar.
Melt the butter in a heavy-based frying pan.
Dip the bread into the batter and add straight to the pan.
Fry on both sides until golden.
Drain on paper towelling.
Divide sliced, between 4 warm plates.
Pile on the fruit and sprinkle with the cinnamon sugar.
Serve with yoghurt.
