French toast with cheese and bacon

    rashers rindless bacon
  • 8
    slices ciabatta bread
  • 60
    ml
    sun-dried tomato pesto
  • 8
    slices mozzarella cheese
  • 6
    eggs
  • 60
    ml
    milk
  • 10
    pinch
    salt
  • 10
    pinch
    freshly ground black pepper
  • 60
    ml
    butter
  • 1
    braised tomato and onion to serve
  • 1
    bunch
    rocket leaves to serve
 

Method

5 mins
 
Fry the bacon in a dry pan or under the oven grill until crisp and golden brown.
Spread 4 slices of bread with the pesto and place the cheese and bacon on top.
Cover with the remaining slices of bread to make 4 sandwiches.
Whisk together the eggs and milk, season with salt and pepper and pour into a flat container.
Dip the sandwiches in the egg, pressing down firmly so the slices stick together.
Melt the butter in a heavy-based pan and fry the sandwiches on both sides until the egg is done.
Cut the sandwiches diagonally.
Serve immediately with braised tomato and onion and rocket.
