French-style green bean salad

    g
    frozen baby green beans
  • 125
    ml
    rocket or other salad leaves of your choice
  • 65
    ml
    Parmesan shavings
  • DRESSING
  • 85
    ml
    olive oil
  • 45
    ml
    good-quality white wine vinegar
  • salt and milled black pepper
  • 5
    ml
    mustard powder
  • 2
    ml
    sugar
 

Method

 
Bring a little salted water to boil in a saucepan, add green beans. Bring water back to boil and blanch beans for 4 minutes. Remove beans from water, refresh briefly in a container of cold water and drain.
Arrange rocket leaves on a platter or individual plates. Top with blanched green beans.

DRESSING: Whisk ingredients together, seasoning to taste.
Just before serving, drizzle liberally over salad. Top with Parmesan shavings and a sprinkling of black pepper.
