Ingredients (9)

60.00 g butter
1.00 kg onions — thinly sliced
5.00 ml fresh thyme
2.00 ml dried thyme
1.25 Litres stock — beef
0.00 seasoning
6.00 bread — French loaf, sliced
150.00 g gruyère cheese — or mature Cheddar cheese, grated
30.00 ml butter — melted

Method:

Heat butter and add onions and thyme.
Cook over a gentle heat for about 20 minutes until browned.
Add beef stock and simmer for 15 minutes. Season to taste.
Cut French bread into thick slices and toast on both sides under the grill.
Spoon the onion soup into individual soup bowls and float toast slices on the soup.
Cover the toast with grated Gruyère or mature Cheddar, and drizzle with melted butter.
Place under the grill until the cheese is bubbling, then serve at once.
