French onion flan

    plain yoghurt

    ricotta cheese

    cake flour
  • 3
    ml
    salt
  • 125
    g
    butter
  • 60
    ml
    water (or more as needed)
  • 30
    ml
    oil
  • 5
    onions, sliced
  • 2
    eggs
  • 125
    ml
    cream
  • pinch of nutmeg
  • salt and pepper
 

Method

 
1. Blend yoghurt and ricotta cheese well in food processor, chill.
2. To make pastry, sift flour into mixing bowl, add salt and rub in butter until mixture is crumbly. Add enough water to combine mixture, knead in food processor, wrap and chill for about 30 minutes. Roll pastry out to fit a 23 cm flan ring, pinching up edge of pastry to form a raised border.
3. Cook onions slowly in oil until softened.
4. Beat eggs thoroughly into ricotta and yoghurt mixture in mixing bowl, mix in cream. Season well with salt, pepper and nutmeg, adding onions. Pour onion mixture into pastry case and bake at 180 ºC for about 35 minutes. Serve hot.
