French loaf with tomato filling

    onion, finely chopped

    rindless bacon, diced

    fresh button mushrooms, sliced

    ripe tomatoes, skinned and diced

Slit open the upper crust of the French loaf, but do not cut all the way through. Hollow out the bread slightly - use the bread to make breadcrumbs and freeze. If desired, brush the outside and inside of the loaf with a little oil and grill for a few minutes to make it slightly crispy. Sauté the onion in a little oil till soft. Add the bacon and fry till crisp. Add the mushrooms and stir-fry till pale brown. Add the diced tomato, reduce the heat and simmer till a thick sauce has formed. Season and spoon into the hollowed out loaf. Serve immediately. Serves 4-6.
