Fragrant steamed mussels

    olive oil

    medium onion, chopped

    garlic, finely chopped
  • 5
    ml
    Tabasco sauce
  • 350
    ml
    white wine
  • 410

    tomatoes, chopped
  • 2
    kg
    black mussels, cleaned
  • 5
    ml
    slivered lemon peel to garnish
  • 15
    ml
    chopped coriander to garnish
 

Method

 
Heat oil in a large saucepan over moderate heat. Add onion and sauté over low heat until tender and golden in colour, about 5 minutes. Add garlic, Tabasco sauce, wine and canned tomatoes (with their juice), and bring to boil. Add mussels, cover with the lid and cook over moderate heat for 5 minutes, or until mussel shells open. Discard any mussels that do not open. Garnish mussels with lemon and coriander. Serve with fragrant rice or chunks of fresh bread.
