Ingredients (14)

400.00 g rice — basmati
25.00 ml oil
2.00 cinnamon — stick
6.00 cloves — whole
10.00 cardamom — pods, crushed
2.00 onion — chopped
2.00 green chillies — sliced
25.00 ml fresh ginger — freshly grated
10.00 ml turmeric — ground
6.00 courgettes — sliced, fried
2.00 tomatoes — chopped
1.00 red kidney beans — tinned and drained
100.00 ml yoghurt — Bulgarian
50.00 ml fresh mint — chopped

Method:

Heat the oil in a large saucepan. Sauté the onions for 30 seconds, then add the spices, chillies and ginger. Continue to cook for a further minute, then add the rice. Add 1 litre of water and bring to the boil. Reduce heat, cover and allow to simmer until all the water has been absorbed and rice is tender. Set aside to cool. Remove cinnamon stick and cloves. Stir in all remaining ingredients and serve garnished with fresh mint.
