Four seasons mini pizzas

    flapjacks, toasted
  • 15
    sun-;dried tomato paste or tomato purée
  • 70
    mozzarella cheese, diced
  • 2
    fresh button mushrooms, sliced
  • 2
    slices black pepper salami, sliced into strips
  • 15
    capers, rinsed
  • 4
    cherry tomatoes, sliced
  • 4
    stoned olives, chopped
  • 4
    anchovy fillets, halved lengthwise
  • salt and freshly ground black pepper
  • olive oil for drizzling on top


Spread each flapjack with sun-dried tomato paste and sprinkle with the diced cheese. Divide the remaining ingredients between the four flapjacks and arrange two anchovy halves in a cross on top. Season generously and drizzle with olive oil. Grill until the cheese has melted and serve immediately.
