Flourless peanut butter cupcakes

Ingredients

  • 1/2
    cup
    peanut butter
  • 1/4
    cup
    honey
  • 2
    eggs
  • pinch
    salt
  • 1
    tsp
    baking powder
  • 1/2
    cup
    carob powder or cocoa
  • 1/4
    cup
    water
 

Method

15-20 mins
 
Preheat the oven to 160 Degrees Celsius.

Separate the eggs.

Whisk the whites until stiff peaks form.

In a separate bowl, combine egg yellow with the rest of the ingredients and mix well.

If the mixture is a little stiff, add some more water.

Fold in the egg whites.

Spoon the mixture into prepared cupcake holders and bake for 15-20minutes.

For a topping, I used almond butter mixed with a bit of honey.
