    butter
  • 125

    castor sugar
  • 100

    flaked almonds, roughly chopped
  • 50

    pecan nuts, finely chopped
  • 60
    g
    mixed green and red glacé cherries, chopped
  • 60

    mixed peel, chopped
  • 30
    ml
    cream
  • 200
    g
    chocolate, melted
 

Method

Preheat oven to 180 ºC. Melt butter in a saucepan over medium heat. Add sugar and gradually bring to the boil. Stir in nuts, cherries and mixed peel. Remove from the heat and stir in the cream. Drop teaspoonfuls of the mixture on to a greased and lined baking tray. Leave spaces between for spreading. Bake in the oven for 10 minutes. Remove from the oven and neaten the edges. Set aside to cool. Spread the smooth side of each biscuit with melted chocolate. Drag a fork across the chocolate to create a patterned effect. Allow to set, then wrap up or store in an airtight container. Makes 10-12.
