Ingredients (12)

70.00 ml butter
1.00 kg beef — deboned, cubed
2.00 onion — finely chopped
30.00 ml flour — cake
2.00 beer
1.00 fresh thyme — sprig
1.00 bay leaves
10.00 ml sugar
30.00 ml vinegar — wine
0.00 salt and freshly ground black pepper
1.00 bread — sliced, crusts removed
30.00 ml english mustard

Method:

Heat 20 ml of the butter in a frying pan and brown the meat over high heat.
In a heavy-based saucepan sauté the onions in in the remaining butter.
Add the browned meat to the onions, sprinkle with the flour and mix well.
Add the beer, thyme, bay leaf, sugar, vinegar, salt and pepper.
Spread the slice of bread with the mustard and place it on top of the meat.
Cover and bring to the boil. Simmer for two hours or until tender, stirring occasionally to prevent the meat from sticking to the bottom of the pan and to allow the mustard to blend with the sauce.
Remove the thyme and bay leaf before serving and serve with homemade fried potato chips.
