Ingredients (11)

400.00 g snoek — fillets
1.00 onion — sliced
1.00 garlic — cloves, crushed
1.00 green pepper — diced
50.00 g butter — or margerine
40.00 ml flour — cake
300.00 ml milk
50.00 ml fresh parsley — chopped
25.00 ml lemon juice
salt
freshly ground black pepper

Method:

Drain the snoek fillets, but reserve the liquid. Flake the fish fillets and set aside. Sauté the onion, garlic and green pepper in about 10 ml of the butter until soft. Remove from the pan. Place the remaining butter in the pan and melt. Add the cake flour and stir to form a smooth paste. Add enough milk to the drained liquid to make up 500 ml and slowly add to the cake flour paste. Heat, while stirring continuously, until the sauce comes to the boil and thickens. Add the snoek, onion mixture, parsley and lemon juice (to taste) and mix well. Season to taste with salt and black pepper. Heat until warmed through. Stir frequently. Serve with rice or noodles.
