Flavoursome pork goulash

    oil

    kg
    pork, cubed
  • salt and freshly ground black pepper
  • 2
    onions, sliced into rings
  • 1
    green pepper, seeded and cubed
  • 2
    large cloves garlic, crushed
  • 30
    ml
    paprika
  • 15
    ml
    cake flour
  • 150
    ml
    dry white wine
  • 30
    ml
    tomato purée
  • 250
    ml
    chicken stock
  • 400
    g
    baby potatoes, scrubbed clean
 

Method

 
Heat the oil in a large saucepan. Season the pork cubes with salt and pepper and brown in heated oil. Remove from the pan and set aside. Sauté the onions, green pepper and garlic in the oil in the pan until tender. Add the paprika and cake flour and stir. Add the wine, tomato purée and chicken stock and boil for a few minutes while stirring. Add the meat and potatoes, reduce the heat and simmer until tender. Serve with a dollop of sour cream if desired. Serves 4-6.
