Flavoursome fish soup

    bacon

    butter

    onion, finely chopped
  • 2
    medium-sized carrots, scraped clean and cut into pieces
  • 15

    cake flour
  • 500
    ml
    milk
  • 500
    ml
    vegetable stock
  • 4
    potatoes, peeled and diced
  • 500
    g
    frozen haddock, cut into pieces
  • 150
    g
    frozen mixed seafood
  • 410
    g
    cream-style sweetcorn
  • 100
    ml
    sour cream
  • 30
    ml
    finely chopped parsley
 

Method

 
Fry the bacon in a large saucepan until done. Remove from the pan and chop finely. Melt the butter and sauté the onion and carrots until glossy. Add the cake flour and stir to remove all lumps. Slowly add the milk and vegetable stock while stirring continuously. Add the potatoes and simmer until the vegetables are tender. Add the haddock and seafood and simmer for another 10 minutes or until done. Return the bacon to the saucepan and add the sweetcorn and sour cream, simmering until heated through. Sprinkle with parsley and serve. Serves 6.
