Ingredients (13)

100.00 g bacon
25.00 ml butter
1.00 onion — finely chopped
2.00 carrots — medium, scraped, chopped
15.00 ml flour — cake
500.00 ml milk
500.00 ml stock — vegetable
4.00 potatoes — peeled and diced
500.00 g haddock — frozen fillets
150.00 g mixed seafood — frozen
410.00 g sweetcorn — creamed
100.00 ml sour cream
30.00 ml fresh parsley — chopped

Method:

Fry the bacon in a large saucepan until done. Remove from the pan and chop finely. Melt the butter and sauté the onion and carrots until glossy. Add the cake flour and stir to remove all lumps. Slowly add the milk and vegetable stock while stirring continuously. Add the potatoes and simmer until the vegetables are tender. Add the haddock and seafood and simmer for another 10 minutes or until done. Return the bacon to the saucepan and add the sweetcorn and sour cream, simmering until heated through.
Sprinkle with parsley and serve.
Serves 6.
