Make your favourite bread dough or buy about 1 kg bread dough at the bakery or supermarket. Leave to rise until double in bulk, punch down and roll out into a fairly large rectangle. Meanwhile preheat the oven to 200 ºC and spray a large loaf tin with non-stick spray. Prepare the same crumb mixture as for Pasta with crumbed cheese and peppers, but use only 375 ml (1 1/2 c) breadcrumbs. Spread the crumb mixture over the dough rectangle and roll up lengthwise. Tuck the ends under the roll and place the roll in the loaf tin. Brush lightly with olive oil and leave to rise until double in volume. Brush once more with olive oil and bake for 10 minutes at 200 ºC. Reduce the oven temperature to 190 ºC and bake for about 50 minutes or until done. (The bread will sound hollow when tapped underneath.) Cool slightly and serve with a salad or soup as a light meal or with an omelette or scrambled egg for breakfast.
Makes 1 large loaf.
