Flavoursome apricot curry

    oil

    kg
    lean pork, cubed
  • 1
    large onion, cut into thick slices
  • 1
    clove garlic, crushed
  • 25

    mild curry powder
  • 3
    large tomatoes, skinned and chopped
  • 250
    ml
    apricot juice
  • 50
    ml
    lemon juice
  • 50
    ml
    chutney
  • 1
    apple, cored, skinned and diced
  • salt and freshly ground black pepper to taste
 

Method

about 1 hour
 
Heat the oil in a large pan and stir-fry the pork cubes until lightly browned. Add the onion and garlic and fry over low heat until the onions just become tender. Add the curry powder and fry for another minute. Heat the tomatoes and apricot and lemon juices and add to the meat, along with the remaining ingredients. Cover, reduce the heat and simmer the curry for about 1 hour. Remove the lid and. Simmer for another 5 to 10 minutes or until the sauce thickens slightly. If necessary, the sauce may be thickened slightly with cornflour. Serve with rice.
