Flavoursome Lamb

    kg
    cubed lamb
  • freshly ground black pepper and salt
  • oil
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and cubed
  • 1
    red pepper, seeded and cubed
  • 3
    cloves
    garlic, crushed
  • 1
    piece
    whole ginger
  • 6
    cardamom seeds
  • 10
    ml
    coriander seeds, crushed
  • 10
    ml
    ground cumin (jeera)
  • bay leaves
  • 1
    juice and rind of lemon
 

Method

 
Season the meat with pepper and salt and fry in a little heated oil until brown. Remove from the pan. Sauté the onion, peppers and garlic in the same pan until soft. Add all the seasonings and stir-fry for another minute. Return the meat to the pan and stir-fry until warm. Season with salt and pepper to taste. Remove the piece of ginger just before serving. Serves 6
