Flat bread rolled with basil, mozzarella, mature Cheddar and ham

Method:

Prepare the dough for the Basic flat loaf as described in the recipe. Leave to rise, punch down and leave to rest. Roll out until the same size as a baking sheet.
Coarsely chop 12 basil leaves and cut 200 g mozzarella cheese into small pieces. Cut 125 g mature Cheddar cheese into 1 cm cubes and shred 100 g thinly sliced ham into smaller pieces.
Spread the ingredients over the rolled out dough and roll up as far a Swiss roll. Tuck the ends underneath the roll and, using a two pronged fork, make holes over the entire surface of the roll. Cover with a cloth and leave to rest for 10 minutes. (The dough will not rise much more.)
Brush the dough with olive oil, sprinkle with coarse salt and press sprigs of thyme on top of the roll. Bake for 30-35 minutes until done. Cool and brush with extra olive oil.
Serve hot or cold.
