Flaming chickens

    ml
    butter
  • 1
    small onion, finely chopped
  • 2
    small chickens, cut into pieces
  • 4
    large egg yolks
  • 250
    ml
    cream
  • 60
    ml
    brandy
 

Method

 
Heat the butter. Sauté the onion and the chicken pieces in a frying pan, cover and simmer for 40 minutes or until cooked. Remove the chicken from the pan and keep warm. Beat the egg yolks and cream together, then add to the frying pan. Cook over a low heat until thick. Don't allow the mixture to boil. Place the chicken pieces in a serving dish and pour over the sauce. Warm the brandy and pour it over the chicken. Light the brandy and bring to the table while still flaming.
