Fish with pineapple

Ingredients (11)

10.00 ml turmeric
5.00 ml salt
500.00 g fish — frozen fillets
oil
2.00 onions — large, sliced into rings
2.00 cm fresh ginger — finely grated
2.00 fresh chillies — deseeded, finely chopped
2.00 ml lemon — zest only
10.00 ml lemon juice
2.00 tomatoes — peeled and finely chopped
2.00 pineapple — tinned rings, halved

Method:

Rub half the turmeric and salt into the fish fillets and fry in a little heated oil until lightly browned on both sides. Remove from the pan and set aside.
Sauté the onion, ginger and chilli in oil until tender. Add the remaining turmeric, salt and lemon rind and juice. Add the finely chopped tomatoes, reduce the heat and simmer for a few minutes. Add the fish and pineapple pieces and simmer until fish is done.
Serve with rice.
Serves 4.
