Fish with pineapple

    turmeric
  • 5
    ml
    salt
  • 500
    g
    frozen fish fillets, slightly defrosted
  • oil
  • 2
    large onions, sliced into rings
  • 2
    cm
    fresh ginger, finely grated
  • 2
    chilies, seeded and finely chopped
  • 2
    ml
    grated lemon rind
  • 10
    ml
    lemon juice
  • 2
    tomatoes, peeled and finely chopped
  • 2
    pineapple rings, halved
 

Method

 
Rub half the turmeric and salt into the fish fillets and fry in a little heated oil until lightly browned on both sides. Remove from the pan and set aside. Sauté the onion, ginger and chilli in oil until tender. Add the remaining turmeric, salt and lemon rind and juice. Add the finely chopped tomatoes, reduce the heat and simmer for a few minutes. Add the fish and pineapple pieces and simmer until fish is done. Serve with rice. Serves 4.
