Fish with herbed crust

    fish fillets
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
  • 25
    ml
    chopped chives, parsley and dill
  • 40
    ml
    finely grated Parmesan cheese
  • 20
    ml
    dry breadcrumbs
  • 15
    ml
    olive oil
 

Method

Preheat the oven to 220°C and lightly grease an oven pan.
Season the fish with salt and pepper. Mix the herbs, cheese, breadcrumbs and olive oil and press the mixture onto one side of each fillet.
Put the fillets, crumbed side up, in the greased oven pan and bake in the preheated oven for 15-20 minutes or until the crust is golden brown and the fish is done.
