Ingredients (9)

20.00 ml peanut oil — or sesame oil
1.00 onion — small, chopped
15.00 ml coriander — ground
600.00 g fish — fillets
20.00 ml fresh ginger — julienned
5.00 ml green chilli — deseeded, finely chopped
40.00 ml lime juice
0.00 salt and freshly ground black pepper — to taste
40.00 ml fresh coriander

Method:

Heat a wok until very hot. Add the oil and swirl the wok to coat it with oil.
Add the onion and stir-fry for four minutes or until soft and golden.
Add the ground coriander and stir-fry for one to two minutes or until fragrant.
Add the fish, ginger and chilli and stir-fry for five to seven minutes until the fish is done.
Stir in the lime juice and season with salt and pepper.
Garnish with the fresh coriander and serve.
