Fish with fragrant couscous

  • 2
    large white fish fillets
  • 10
    ml
    fresh thyme
  • salt and freshly ground black pepper
  • 0.50
    lemon, juice and finely grated rind
  • 100
    g
    couscous
  • 6
    dried apricots
  • 1
    tomato, seeded and chopped
  • 15
    ml
    chopped capers
  • handful of watercress, chopped
 

Method

 
Season the fish with the thyme, salt, pepper and lemon juice.
Place the fish in a saucepan, add a little water, cover and steam until done.
Meanwhile prepare the couscous according to the pack instructions and stir in the remaining ingredients.
Adjust the seasoning and serve with the fish.
Serve with a green salad.
