  • 25
    g
    butter
  • 1
    large onion
  • 1
    kg
    white fish bones
  • 1
    lemon (juice only)
  • 3
    peppercorns
  • 1
    bay leaf
  • parsley stalks
  • 3
    Litres
    water
 

Method

 
Melt the butter in a thick-based pan.
Add the onion, well-washed fish bones and remaining ingredients, except the water.
Cover with greaseproof paper and cook gently for 5 minutes.
Add the water, bring to the boil, skim and simmer for 20 minutes. Strain and use as required.
