Ingredients (12)

10.00 ml sunflower oil
1.00 garlic — cloves, crushed
1.00 onion — sliced
10.00 ml curry powder — medium
1.00 bay leaves
5.00 ml fresh ginger — grated
150.00 ml apricot juice
80.00 ml lemon juice
800.00 g kingklip — or firm white fish
16.00 apricots — halved
250.00 ml mayonnaise
8.00 piquanté peppers — finely chopped

Method:

Heat oil in a saucepan and saut&eacute the garlic and onion until soft.
Add curry powder and saut&eacute for 30 seconds, then add bay leaf, ginger and apricot juice.
Simmer for five minutes, remove from the heat and add lemon juice. Leave to cool completely.
Thread fish cubes onto wooden skewers with an apricot half at the beginning and end of each sosatie.
Pour marinade over the fish and set aside to marinate for not longer than 30 minutes.
Place on a greased baking tray and grill for three to four minutes on each side. Season to taste with salt.
Stir the chopped piquanté peppers into the mayonnaise and serve with warm fish sosaties.
