Ingredients (14)

900.00 g haddock — fillets
425.00 ml milk
1.00 onion — small, sliced
6.00 black peppercorns
1.00 bay leaves
salt and freshly ground black pepper
5.00 eggs — hard-boiled, sliced
10.00 ml fresh parsley — chopped
10.00 ml fresh dill — chopped
35.00 ml butter
50.00 ml flour
30.00 ml yoghurt
1.00 instant mashed potatoes

Method:

1. Preheat oven at 180 ºC. Arrange the fish fillets in a roasting pan. Heat the milk with the onions, peppercorns, bay leaf and a pinch of salt.
2. Pour over the fish and cook in the oven for 15 minutes or until the fish is firm and creamy looking.
3. Strain off the milk, reserving it for the sauce. Flake the fish into a pie dish and add the eggs. Sprinkle with parsley and dill.
4. Heat the butter in a saucepan, stir in the flour and cook for 1 minute. Remove from the heat and gradually add the reserved milk. Return to the heat and stir, bringing slowly to the boil. Season, and stir in the yoghurt. Pour over the fish. Spread a layer of instant mashed potato (made with 1/2 water, 1/2 milk) over the fish and mark with a fork in a criss-cross pattern. Dot with butter. Place on a baking sheet and brown in the preheated oven for 10 minutes.
