Fish kebabs with apple

Ingredients (10)

MARINADE
150.00 ml wine — dry white
2.00 shallots — finely chopped
2.00 lemons — juice only
1.00 lemon — zest and juice
15.00 ml fresh parsley — chopped
KEBABS
2.00 apple — Starking, peeled, cored and wedged
24.00 apricots — dried
450.00 g monkfish — skinned, deboned, cubed
15.00 ml butter — melted or oil
7.00 ml black pepper — freshly ground

Method:

MARINADE
Mix the wine, shallots, lemon juice, lemon rind and parsley.
KEBABS
Thread the apples, apricots and fish cubes onto kebab skewers.
Brush the kebabs with the marinade, cover and chill for 20 minutes.
Drain the kebabs and brush with the butter or oil.
Heat a frying pan and fry the kebabs over medium heat, turning every one to two minutes to ensure they cook evenly.
Season with pepper and serve with a crisp salad.

Use monkfish, kabeljou or kingklip to make these kebabs.
The fruity taste and firm texture of Starking apples makes them ideal for frying.
