Fish kebabs with apple

Ingredients

  • MARINADE
  • 150
    ml
    dry white wine
  • 2
    shallots, finely chopped
  • 2
    lemons, the juice
  • 1
    lemon, the grated rind
  • 15
    ml
    chopped parsley
  • KEBABS
  • 2
    Starking apples, peeled, cored and cut into wedges
  • 24
    dried apricots
  • 450
    g
    monkfish, skinned, deboned and cubed
  • 15
    ml
    melted unsalted butter or oil
  • 7
    ml
    freshly ground black pepper
 

Method

10 to 15 minutes
 
MARINADE
Mix the wine, shallots, lemon juice, lemon rind and parsley.
KEBABS
Thread the apples, apricots and fish cubes onto kebab skewers.
Brush the kebabs with the marinade, cover and chill for 20 minutes.
Drain the kebabs and brush with the butter or oil.
Heat a frying pan and fry the kebabs over medium heat, turning every one to two minutes to ensure they cook evenly.
Season with pepper and serve with a crisp salad.

Use monkfish, kabeljou or kingklip to make these kebabs.
The fruity taste and firm texture of Starking apples makes them ideal for frying.
