Fish fillets in wine and mushroom sauce

45.00 ml butter
45.00 ml flour — cake
425.00 g cream of mushroom soup
125.00 ml wine — white
10.00 ml mustard — powder
30.00 ml cheddar cheese — grated
lemon — pepper
50.00 ml water
1.00 kg hake — fillets, skinned

Method:

Preheat the oven to 180 ºC. Spray a large ovenproof dish with non-stick spray.
Heat and melt the butter in a heavy-based saucepan. Add the cake flour, stirring until smooth. Add the cream of mushroom soup, white wine, mustard powder and cheese. Season with lemon pepper to taste. Dilute the sauce with about 50 ml water.
Arrange the hake fillets in the prepared dish. Pour over the sauce and bake for 30-45 minutes until done or the fish flakes easily with a fork.
Serve with a salad.
Serves 6-8.
