Fish cakes with soy dressing

Ingredients (8)

600.00 g hake — cooked
2.00 eggs — beaten
45.00 ml sweet chilli sauce
500.00 ml breadcrumbs — white, fresh
0.00 flour — optional
0.00 oil — for frying
Soy dressing
375.00 ml soy sauce
125.00 ml sugar

Method:

Mix fish, eggs, chilli sauce and breadcrumbs with wet hands.
Shape mixture into little cakes, adding a little flour if needed to help mould them.
Heat oil in a frying pan and fry cakes, on both sides, until golden.
Drain on paper towels.
Serve with soy dressing and sweet potato straws.
Soy dressing:
Heat together soy sauce and sugar.
Simmer until slightly reduced and a little sticky.
Sweet potato straws:
Julienne peeled sweet potatoes and deep-fry until crisp.
Drain and serve.
