Fish bobotie

    thick slice of bread

    milk

    minced fish

    onions, sliced into rings

    curry powder

    turmeric

    juice of a lemon

    apricot jam
  • 25
    ml
    chutney or sugar
  • salt and pepper
  • 2
    eggs
  • 3
    bay leaves
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a 24 cm ovenproof dish with non-stick spray. Soak the bread in the milk, squeeze out the milk and mash the bread. Reserve the milk. Mix the fish with the bread and set aside. Sauté the onion in a little oil till soft. Add the curry powder and turmeric and stir-fry for 1 minute. Add the lemon juice, apricot jam and chutney and simmer gently. Add the fish mixture and mix lightly. Season with salt and pepper to taste and turn into the prepared dish. Beat the eggs and leftover milk. Pour the egg mixture over the fish mixture, arrange the bay leaves on top and bake for 30-45 minutes or till done and set. Serve with a salad and chutney. Serves 4-6.
