Fish wraps with spicy pineapple relish

    butter
  • 400
    g
    fresh fish
  • fresh lemon juice
  • olive oil
  • 1
    onion, diced
  • 1
    green pepper, seeded and diced
  • 1/2
    pineapple, peeled and diced
  • cayenne pepper
  • 4
    wraps or pita breads, toasted
  • lettuce and tomato slices, to serve

Melt the butter in a hot pan. Fry the fish for a few minutes per side, until done. Season to taste and squeeze fresh lemon juice over. Flake roughly.

Heat a little oil in the pan and sauté the onion until half cooked. Add the green pepper and pineapple and sauté for about 2 minutes. The vegetables must still be slightly crunchy. Sprinkle with some cayenne pepper, to taste.

Make a pocket with the wraps by folding them in half and then in half again. Fill the pockets with lettuce, tomato slices, fish and some of the pineapple relish.
